Baja Derves RecipeBaja-Derves
Featuring green chilies, cheddar cheese, olives and tiny shrimp, this award-winning recipe is featured in
Home Made Cooking – Good ‘Nuff For Sharing’, a recipe book published by the Antique Gas & Steam Engine Museum in Vista, CA.

1 ½ cup cheddar cheese, shredded
1 can (4 oz.) diced green chili peppers, drained
1 can (2 ¼ oz) ripe olives, pitted and sliced, drained
¼ cup sliced green onions
¼ cup mayonnaise or salad dressing
1 can (4 ½ oz.) tiny shrimp, drained and rinsed
36 to 40 round tortilla chips

In a large bowl, combine cheese, chili peppers, olives, onion and mayo or salad dressing. Gently fold in shrimp.
Arrange about 20 tortilla chips on a 12 inch microwave-safe platter.
Micro-cook, uncovered, on high for 1 to 2 minutes or until cheese is melted, giving plate a half turn after half the time (low wattage ovens: place 12 chips on paper plate for 1-2 minutes).
Repeat with remaining chips and cheese mixture.
Makes about 36 – 40 appetizer chips; 12 appetizer servings.

 
The Antique Gas & Steam Engine Museum is nestled on 55 acres of rolling farm ground in Vista, California. Featuring collections of over 20,000 items from the 1849-1949 era; the museum collects, preserves and displays examples of mechanical ingenuity and crafts associated with the early days of the American farm and rural community.
