Green
Tomato Relish
Featuring green tomatoes, cabbage, red and green
peppers, and onions - this tasty relish recipe is
featured in ‘Farm House Favorites’, a cookbook
published by the Antique Gas & Steam Engine Museum,
located in Vista, CA.
8
cups chopped green tomatoes
3 cups chopped cabbage
2 cups vinegar
2 cups sugar
2 cups chopped peppers (red and green)
1 cup water
3 large onions
2 Tbsp. salt
1 ˝ tsp. mustard seed
1 ˝ tsp. celery seed
1 tsp. whole cloves
Wash and cup up tomatoes, place in a bowl overnight
with the salt.
Drain and put in a large kettle. Add onions,
peppers, sugar and and seeds.
Tie cloves in cloth and add to mix.
Cook until the onions are tender, then put into
sterile jars and process 45 minutes in a hot water
bath.
