Pancakes
This hearty pancake
recipe is from the ‘Home Made Cooking Good ‘Nuff for Sharing’ Cookbook
published by the Antiques Gas & Steam Engine Museum. Nestled on 55 acres
of rolling farm ground in Vista, California; the museum preserves the
early days of the American farm and rural community.
2 egg whites
1 cup buttermilk
¾ cup quick cooking oats
½ cup all-purpose flour
1 Tbsp. sugar
1 Tbsp. vegetable oil
1 tsp. baking soda
Beat egg whites in a large bowl with hand beater until foamy: stir in
remaining ingredients.
Grease heated griddle if necessary (to test, sprinkle with a few drops
of water. If bubbles skitter around and quickly evaporate, heat is just
right).
For each pancake, pour about 3 tablespoons of batter from tip of large
spoon or from pitcher onto hot griddle. Cook pancakes on hot griddle.
Cook pancakes until puffed and dry around edges. Turn and cook on other
sides until golden brown.
Makes about 10 pancakes
