 Apple
Corn Bread
Talk about comfort food! Made with tart apples, corn meal, and a
dash of cinnamon, this wonderful corn bread recipe is featured
in ‘Farm House Favorites', a recipe book published by the
Antique Gas & Steam Engine Museum in Vista, CA.
2 cups white corn meal
¼ cup sugar, divided
½ tsp. salt
1 tsp. cream of tartar
1 tsp. baking soda
1 1½ cups milk
3 to 4 tart apples, peeled, cored and thinly sliced
1 tsp. cinnamon
Preheat oven to 375 degrees.
Grease well an 8 x 11 inch baking pan.
In a bowl mix the cornbread, 2 Tbsp. sugar, salt, cream of
tartar, and baking soda.
Add milk and beat until smooth. Turn into baking pan.
Cover with overlapping layers of apple.
Combine remaining sugar and cinnamon and sprinkle over top of
apples.
Bake 30 to 35 minutes, or until toothpick inserted in the center
comes out clean.
