Bread & Butter Pickles
Whether you have a hankering for some homemade pickles or you need
to do something with all those extra cucumbers you harvested from
the garden – this old-time recipe is a great fix! Get out those
canning jars, some onions and cucumbers, vinegar and spices, and
away you go. This recipe is featured in ‘Home Made Cooking – Good
‘Nuff For Sharing’, a recipe book published by the Antique Gas &
Steam Engine Museum in Vista, CA. Happy Pickling!
5 medium cucumbers
3 medium onions
1 cup water
1 cup of vinegar
¾ cup sugar
¼ cup salt
½ tsp. ginger
½ tsp. celery seed
½ tsp. mustard seed
¼ tsp. turmeric
Wash cucumbers. Cut in thin slices. Peel and slice onions.
Combine onions and cucumbers. Add salt. Let stand for 2 hours.
Drain.
Heat vinegar, water, celery seed, mustard seed, sugar, ginger and
turmeric, to boiling.
Add cucumbers and onions. Boil slowly until tender.
Pack while hot in freshly sterilized jars.
