Chocolate Mint Dessert
This easy-to-make recipe is from the Antique Gas & Steam
Engine Museum's Cookbook 'Homemade Cooking Good 'Nuff for
Sharing'. Nestled on 55 acres of rolling farm ground in
Vista, California; the museum preserves the early days of
the American farm and rural community.
Mix together and spread in a greased 9” x 13” pan:
2 cups
vanilla wafer crumbs
¼ cup melted butter
Mix the following together and beat until thick:
½ cup
butter
3 squares melted semi-sweet chocolate
3 eggs
1 ½ cup powdered sugar
Pour and
spread this over the wafer crumbs. Refrigerate while
preparing the topping.
Whip 1 cup
whipping cream. Then fold in an 8 oz. package of miniature
marshmallows. Spread over top of dessert.
Crush about ½ cup of pastel party mints and sprinkle over
the top.
Refrigerate several hours or overnight before serving.
