Potato Cheese Soup
This mouth-watering soup recipe is from the ‘Home Made
Cooking Good ‘Nuff for Sharing’ Cookbook published by the
Antiques Gas & Steam Engine Museum. Nestled on 55 acres of
rolling farm ground in Vista, California; the museum
preserves the early days of the American farm and rural
community.
4 cups
diced potatoes
1 cup chopped onions
1 ˝ cup grated carrots
1 ˝ cup chopped celery
˝ stick margarine
6 chicken bouillon cubes
1 tsp. pepper
4 cups water
2 cups diced ham
1 can evaporated milk
˝ cup flour with water
3 cups grated cheese
Place potatoes, onion, carrots, celery, margarine, bouillon
cubes, water, and ham in large pot; simmer until tender.
Add milk, flour, cheese and pepper.
Crumbled bacon may be sprinkled on top as a garnish.
Makes 8 – 12 servings.
Note: May use
turkey ham, and you can reduce the salt by adding only 3
bouillon cubes instead of 6.
