Pumpkin
Pear Bread
Featuring just the right amount of sugar and
spice and sweetness, this delicious bread is
featured in ‘Home Made Cooking – Good ‘Nuff
For Sharing’, a recipe book published by the
Antique Gas & Steam Engine Museum in Vista,
CA.
˝ lb. fresh Bartlett pears (1 large or 2
small)
3˝ cups unsifted flour
1˝ tsp. salt
2 tsp. baking soda
2 tsp. cinnamon
1 tsp. ground ginger
2/3 cup vegetable oil
4 large eggs
2 cups sugar
1 cup canned pumpkin
˝ cup walnuts, chopped
Pare and core pear; finely diced to measure
1 cup. In a bowl combine flour, salt, soda,
cinnamon and ginger.
In mixer bowl combine oil, eggs, and sugar
and beat together until mixture is light.
Add pumpkin; beat smooth.
Stir in flour mixture, then pears and
walnuts.
Divide batter evenly between 2 greased and
floured 8˝ inch metal loaf pans.
Bake on low rack in 350 degree oven 55 to 70
minutes or until pick inserted in center
comes out dry.
Remove from oven and let stand 10 minutes;
turn out onto wire rack to cool.
Makes 2 loaves.
